To help you out, I’m going to share my top 5 summer recipes you can fit on a postcard. Each recipe has a maximum of 5 ingredients, so it’s easy to create mouth-watering meals the whole family can enjoy.
1.Classic Caprese Salad
It’s just not summer until you have a Caprese salad. This simple dish features the classic Italian trinity of fresh mozzarella, tomatoes and fresh basil. Here’s exactly how to make my favourite summer salad.
•2 large tomatoes, thinly sliced
•1 ball of fresh mozzarella, thinly sliced
•5/6 leaves of fresh basil leaves
1.Arrange your tomato and mozzarella slices in layers on a plate
2.Scatter the basil leaves over the salad
3.Finish with a drizzle each of the olive oil and balsamic vinegar
2.Herby Chicken and Beans
A delicious chicken main that’s infused with flavour thanks to the fresh oregano sprigs. With just 5 ingredients, it’s the perfect recipe for a quick, easy dinner tonight!Top tip: add a dash of crushed red pepper for extra flavour.
•1 tin cannellini beans
•A punnet of fresh cherry tomatoes
•4 sprigs fresh oregano
•4 chicken thighs, skin on
1.Heat oven to 200°C
2.Add the beans, tomatoes and oregano to a deep baking dish
3.Place the chicken skin-side up on top of the bean mixture and rub with olive oil
4.Roast for 35 minutes or until the chicken is cooked through
3.Lemon Tuna Pasta
This light, fresh pasta dish is perfect for al fresco dinners in the garden. It also saves well, so it’s great for picnics and other family gatherings during the summer months.
•Juice of 1 lemon, plus 1 tsp grated zest
•3tbps unsalted butter
•2 cloves garlic, minced
1.In a large saucepan, mix together the lemon juice and zest, unsalted butter, garlic and tuna and cook for 2 minutes – add water to create a saucy consistency
2.Mix in the pasta until it is fully coated and heated through
Finish dinner off with a simple dessert of liqueur-soaked strawberries. For our recipe, we’ve used amaretto for an almond twist! Finish with some classic vanilla gelato for a more sumptuous treat.
•Punnet of fresh strawberries,quartered
•Flaked almonds, to finish
1.In a shallow container, mix in the strawberries and liqueur
2.Leave to soak overnight in the fridge
3.Spoon into small bowls with the gelato
4.Sprinkle flaked almonds over the top of each bowl
This bubbly concoction is reminiscent of summer days. As simple as it is refreshing, here’s how to create my irresistible limoncello spritz.
•1 lemon, sliced
1.Mix the limoncello and prosecco in a large jug or carafe
2.Add the lemon slices and ice
3.Top up with sparkling water to adjust strength to your preference
4.Divide between 4 tumblers or large wine glasses
