A simple and tasty recipe, with really healthy light ingredients, starting from the Khorasan Kamut pasta I used.

Khorasan wheat (aka Kamut) is a very old type of wheat that has multiple beneficial properties. It has a low glycemic content, superior nutritional value, 3 times the fibre of conventional pasta, a source of selenium and B vitamins (fundamental for liver functioning and nervous system), easily digestible and finally, associated with vegetables or vegetable-based condiments, like this recipe with homemade rocket pesto is a real full of energy and health indeed.

Serves 2, Preparation time less than 10 mins, Cooking time 11 mins 


In a pot bring the salted water to boil and then pour Kamut Spaghetti. Keep a ladle of cooking water aside.

Meanwhile, to prepare homemade pesto it takes 5 minutes, follow my recipe by clicking on the posted links.
If already prepared, just heat it in a saucepan.

Drain the spaghetti and add them to the saucepan with pesto, add the ladle of cooking water and toss to combine. Serve garnished with a few leaves of rocket salad and a drop of Extra Virgin Olive Oil.
