Cryomaceration for 2 days followed by a traditional maceration for 8-10 days in stainless steel containers to a temperature of 24-26° C.
Colour: Bright garnet colour
Bouquet: Persistent and intense bouquet
Taste: Full and ethereal
Ideal with very structured dishes such as red meat, game feathered and furred, also great with Pecorino cheese.
18° - 20°C it should be stored in a cool cellar at a temperature constant and dark.
Alcohol: 13.5% vol
