“Il Carato” is the first acacia honey in the entire world aged for nine months in French oak barrels.
As a liquid honey with a pungent smell that reminds us of mulled wine, with a surprisingly sweet aftertaste.
The best pairing combination of this honey is with Parmigiano cheese 24 months aged or sheep cheese semi-seasoned. Excellent when caramelising red meat or row on a boiled salmon. It is also very pleasant if combined with Greek yoghurt and with garnish dried fruit.
The Carato. A breathtaking panorama of the “Appennini” mountain range and of the town of Fabriano: on this hill is located the “Azienda Agricola Giorgio Poeta” awarded the prize “Oscar Green” in 2011 thanks to his Carato honey, the first honey in the entire world which is aged in wood barrels. After this success, the product range has been enriched with the “Idromiele” (a honey-fermented nectar) and “La Stella”, a perfect blend of honey and anise.
